I thought the name might derive from the abundant animal bodies you see everywhere in the Falklands - see this chapter of the Falklands area page - but this is apparently not the case.

Nothing sinister as the name attaches to the island Sarah. It's a lovely and benign place.
In fact the island is named after the HMS Carcass, a sloop that was part of the Britsh flotilla of 3 vessels that arrived in 1766 to establish the settlement on nearby Saunders Island. The real question, of course, is how HMS Carcass got its name. I'll have to check into that.
